Mango Muffins

Again comes another weekend and the hunt for new recipes !!!

Since this is summer season and being the season of King of fruits -Mango,I decided to make something with mango.

Saturdays and Sundays or rather it can be called as the so called Weekends, are the only time that can be used for some leisure. The remaining 5 days of the week, are running on a very hectic schedule. Day starts with a morning walk for 30 minutes, then coming home and dressing up daughter for school, packing her tiffins and finally sending her to playschool. And finally coming to office. Out of this schedule, I don't get time to make anything special, even though I'm quite interested about cooking.

Ingredients:

1 and 1/2 cups white sugar 1 cup vegetable oil 2 large eggs

pinch of vanilla powder (or 1/2 teaspoon vanilla extract) 3 cups all-purpose flour 1 teaspoon baking soda 2 teaspoons baking powder

1/2 teaspoon ground cardamom

1/2 teaspoon salt 1 cup plain yogurt

2 cups fresh mangoes, chopped

Directions:

Preheat oven to 350°.

In a large bowl, cream together the sugar and oil. Add the eggs one at a time, beating until incorporated. Beat in vanilla.

Sift together the flour, baking soda, baking powder, cardamom and salt in a medium bowl. Add the dry ingredients to the wet, alternating with the yogurt, scraping down the sides of the bowl as necessary and beating until just incorporated. Put the mango pieces into a mixer and just whip it once .Then add it to the above mixture Pour the mixture into a silicon mould.(can be seen from the pic)

Bake for 18-20 minutes, or until muffins are slightly browned at the edges and golden across the top, and a toothpick inserted in the center comes out clean. Allow muffins to cool slightly before unmoulding.
