Potato Wedges

Potato wedges are a variation of french fries. As their name suggests, they are wedges of potatoes, often large and unpeeled, that are either baked or fried. For those looking to cut down on calories that come with the fries, here is a healthier alternative - Baked Potato Wedges. This can be served as a great side dish, snack or an appetizer

Ingredients:

· red chilli flakes ½ teaspooN

· potatoes parboiled and cut into wedges with skin 5-6 medium

· garlic finely chopped 1 tablespoon

· crushed black peppercorns ½ teaspoon

· Salt to taste

· mixed dried herbs 1 teaspoon

· olive oil 4-5 tablespoon

Preheat oven at 180°C. Place a silicon sheet on a baking tray.

Combine potato wedges, garlic, crushed peppercorns, salt, dried herbs, red chilli flakes and olive oil in a bowl and mix well.

Place the potato wedges on the baking tray and put it in the preheated oven. Bake at 200°C for 18-20 minutes.

Remove wedges from oven and place on a serving plate.

Lime Mint Cooler

Ingredients

handful of fresh mint leaves, washed

juice of 1 lime

Sugar (to taste)

cold water - 2 glasses

Method

Combine all ingredients in a blender and give it a good whisk for 2 minutes. Drain the juice in a strainer and serve cold
