Cabbage Thoran

Unlike any other weekend, in which I cook something special,(which will be out of the normal lunch/dinner menu),this time I thought of making cabbage thoran in the exclusicve style (by my aunty, and this is one of her signature items)
Cabbage thoran or cabbage stir fry is a dry vegetable dish made in kerala cuisine. thoran is basically finely chopped or grated vegetables cooked with chilies, fresh grated coconut and spices.
The cabbage thoran is an important side dish in kerala feast known as sadya. thoran is usually eaten along with boiled rice.
Ingredients:
Cabbage - 1 full
Grated coconut- 1 cup
Cumin seeds- 1/2 tsp
Garlic - 2 cloves
Green chilli - 2-3 large ones
Dried red chillies
mustard seeds - 1 tsp
Turmeric powder - 1 tsp

Method:
Whip the following items in mixer for 1 minute : coconut,cumin seeds,garlic,green chilli . Now add this paste to the grated cabbage and allowed to rest for 15- 20 mins.
Heat oil in a pan and add mustard seeds and dried red chillies .Wait for the mustard seeds to crackle.
Add turmeric powder to this.
Then add the cabbge and coconut ()which was mixed )o the pan.
Stir fry and cook for 2-3 mins (with lid closed)
Note: If u want to be very crispy then cook for 2- 3mins, else, it can be cooked for more time.
