Dates Cake

Dates is known to as a very rich and delicious dry fruit. It can be used in a variety of both sweet and savoury recipes. When used in their dried form, they add a richness and sweetness unrivalled by most other dried fruit. They are particularly popular in middle eastern and North African cuisine.
The following recipe is very easy to make and hence makes a good recipe for beginners.
Ingredients
· 1 cup of sugar
· 1/2 tsp vanilla extract
· 1 tsp baking powder
· 1/2 cup cashew nuts
· 1 cups flour
· 2 cup dates without the seeds
· 1 egg
· 3/4 cup milk
· 10-12 dates
Method :
Put the dates and the milk into a vessel and soak it for 2-3 hours
Grind this dates and milk mixture into a fine paste.
Add the butter and let it melt then add the sugar. Let the mixture cool.
Add the eggs into the cool mixture whisking very well.
Then add the dry ingredients that you've mixed in another bowl first.
Pour the batter into a well greased (or silicone) bundt cake tin (2 litres) and bake at 175 C for about 1 hour or until a tester comes out clean.
