Vegetable Cutlet

This recipe of vegetable cutlet is lying in my drafts folder for more than 2 weeks.
And in this period of time I have prepared the dish twice.Unluckily, I couldn't take a proper click :( Inspiration for making the dish came when I got a call from my husband's sister asking the recipe for cutlet. I told her the recipe over the phone and she was all set to make it. Then it suddenly came to my mind that I should also try to prepare the same.Since it was almost evening snack time and my mother-in-law was asking about any tea time snack, I thought let's try to prepare the same. Almost all ingredients were almost available in my kitchen, execpet beetroot(which is not a common veggie in my kitchen).SO quickly I took some potaoes and set them to boil in a pressure cooker. Surprisingly I was able to do the prepare the dish faster and it turned out well!! Ingredients Green chilies-finely chopped- 1 or 2 nos ( or according to taste) Garlic- finely chopped- 1 tsp Onion -finely chopped- 1 large Kashmiri chili powder- 1 tsp Turmeric powder-1/4 tsp Black pepper powder- to taste ( I used 3/4 tsp) Garam masala- 1/2 tsp Vegetables-finely chopped- 1 to 1.5 cups( Carrot,cabbage,green beans) Potato -boiled and mashed- 3 small Coriander leaves- chopped- 1 tbsp Bread crumbs- as required Oil - for frying 1-2 Egg white Salt to taste Method Heat oil in a pan and add green chilies,garlic and onion.Saute until onion turns golden brown ,over a medium low flame. Add chili ,turmeric,coriander,black pepper and garam masala powder.Saute for a minute or two. Next add chopped vegetables and salt to taste.Mix well ,cook until it is done. Add mashed potato and coriander leaves.Mix well until combined.Switch off the stove.Add more salt if required. Allow this mixture to cool slightly.Shape it into small balls and lightly flatten it using your finger tips.Keep aside. Dip each cutlets in the egg whites and roll in breadcrumbs to form an even coating.( you can freeze the cutlets at this point,if desired) Heat oil in a pan and deep fry the cutlets ,turning once in between.Serve with tomato ketchup.
