Quick Fettuccine Noodles

Recipe inspiration by my sister. She had tasted the following dish from her friend.She came to me and told about her liking to have the same kind of noodles (which her friend had prepared with olive oil, mushrooms and capsicum). Normally I have never used olive oil for any of my dishes except for Pizza. Just had a doubt about the olive oil to be used for the same. I have prepared the dish using extra virgin olive oil . Also, reagarding the veggie part, cherry tomato is a must for this one. Due to unavailability of the same, this cannot be seen in the dish which I have done, To all out there, please make sure that cherry tomato should be part of the Quick Fettucine noodles.

Ingredients:

Olive Oil

Fettucine Noodles

Red Bell Pepper - 1 medium cut into juliennes

Olives - 3-4 no.s

Italian Seasoning - 1 tsp

garlic-1 or 2 cloves

1/2 onion- diced

Method :

1. Cook the fettucine noodles as per the instructions in the packet.

OR

First, let water come to a complete boil before putting pasta in.

Second, throw in a tablespoon of Olive oil into water and put the pasta. The water should also be lightly salted as well.Stir gently until it comes back to boil.When you drain the pasta, don't rinse it.

Third, do not overcook it. When pasta is overcooked, it releases starch which makes it stick together.

2. Saute bell pepper,olives, onions,garlic in olive oil. Cook 5 minutes on simmer. Add salt, pepper and Italian seasoning to taste. . Pour over cooked fettuccine. Mix well and add plenty of grated Parmesan cheese (optional) and enjoy.
