While lazily surfing across TV channels, came across my favorite show on Fox Traveller, Food Safari. The show was telecasting Chinese Food Safari and the dish shown was Toffee banana. It is a classic Chinese dessert. Slices of banana are battered and deep-fried, then coated in toffee and sesame seeds making them deliciously crisp. You could also try this recipe with other fruit, such as apple or pineapple.
Ingredients
Oil For Deep Fry
All Purpose Flour : 1Cup
Corn Flour: 1/2Cup + for layering the bananas
Sesame Seeds: 1Tablespoon: black and white
Sugar : 150Grams
Bananas : 4Numbers sliced diagonally
Vegetable Oil: 1 tsp
Vanila Essence- 1 tsp
Ice cubes
Directions
Mix the flour, cornflour,vanilla,1 tsp oil and little water to make a thick batter (thick enough to coat the banana slices)
Cut the bananas in to roundels, and layer it with corn flour and then dip it in the batter and deep fry the bananas.
For caramel Take a pan add sugar, little water cook for medium heat until caramel forms, remove from the heat then working quickly and one at a time, add the fried bananas to the caramel and turn to coat, drop into ice water to set the caramel.
Drain immediately then sprinkle with sesame seeds
