Salted Caramel Mousse

A mousse is a prepared food that incorporates air bubbles to give it a light and airy texture. It can range from light and fluffy to creamy and thick, depending on preparation techniques.A mousse may be sweet or savory.Dessert mousses are typically made with whipped egg whites or whipped cream,

and generally flavored with chocolate or puréed fruit.

The instructions for this dessert are deceptively simple, but when cooking with sugar on direct heat, it can quickly turn ugly. To ensure success, be sure to follow the directions exactly, avoiding the temptation to stir the sugar syrup.

Ingredients

Whipping cream- 1 medium bowl (which is used for serving icecream)

Melted chocolate syrup - 1 medium bowl

Nuts/white chocolates - For garnishing

For the salted caramel

Butter- 2 tbsp

Salt- 1/2 tsp

Fresh cream

Sugar- 2tbsp

Method:

Use electric beaters to beat the thickened cream until soft peaks form. Gently fold half the cream into the chocolate mixture until almost combined. Fold in remaining cream.Then pour this mixture into a piping bag.

Transfer this to shot glasses using piping bag.

For the salted caramel

Evenly place the sugar and salt in a wide saucepan. Heat over medium heat. Continue cooking, stirring very gently, until the sugar is melted and caramelized. Continue cooking until the caramel is a deep amber color.

Quickly whisk in the butter pieces and fresh cream, stirring until melted on low heat for maximum 1 minute.

Pour this salted caramel over the mousse and top with white chocolate and nuts.
